Basil - Sweet Genovese

Ocimum basilicum - Annual. Height 35cm. Aromatic herb popular in Mediterranean dishes. Delicious finely chopped with tomatoes or in omelettes. Key ingredient in many soups and sauces. Very delicate, makes good windowsill pot plant.

Borago officinalis - Annual. Height 35cm. Young leaves pleasant in cool salads, or in yoghurt or cream cheese. Decorative flowers can also be added to salads but more often in drinks or ice soups.

Allium schoenoprasum - Perennial. Height 30cm. Leaves are mild onion flavour used chopped in salads or on boiled eggs, stir into cottage cheese or soured cream on jacket or new potatoes. Key ingredient of Fines Herbes.

Anethum graveolens - Annual. Height 110cm. Keep apart from Fennel. Seeds are used to flavour soups, rice, fish, and lamb stew. Immature seed heads are added to pickled cucumber, cauliflower or gherkins.

Foeniculum vulgare - Perennial. Height 200cm. Keep apart from Dill. Goes well with fatty foods like pork & veal. Seeds used to flavour bread, fish or sauce.

MELISSA officinalis - Perennial. Height 60cm. Can be invasive. Young leaves can be used in stuffing, fruit salads or added in vinegar for a minty lemon flavour. Bees love its inconspicuous flowers.

MELILOTUS officinalis - Biennial. Height 90cm. This herb was once grown as a fodder crop for livestock, and to flavour beers. Today it is recognized as one of the best herbs for attracting bees.
